How to make a Sear-iously Awesome Steak

Who loves a good steak? Who knows how to make a good steak at home? Most importantly, who knows how to buy a good cut of meat? I’ll be honest with you, I used to be terrible at picking a perfect cut of meat. I would go to specific steak houses of hibachi restaurants just so I could get a good steak. That is until I went to a local grocery store with an amazing butcher her taught me everything I needed to know to make a delicious steak at home, and now I am going to share the details with you. Ladies, being able to make a steak at home is going to save you so much money. 

First you will need to make sure you have a cast iron skillet - this is the secret to amazing steak. You will also need salt and pepper, vegetable oil and of course steak. 

Good steaks include: ribeye, t-bone, strip, top sirloin. Chuck or Round is no good. Also filet mignon is good, however ribeyes are just as tasty and definitely cheaper. 

So let’s get to perfecting that steak.

First you will want to let the steak come to room temperature as well as heat your oven to  400 degrees Fahrenheit. If it’s frozen you will want to let it thaw in the fridge first. Season that baby! Rub salt and pepper into both sides of the steak. Heat the pan on high, add a teaspoon of oil and heat it until it smokes. Place the steak on the pan and cook for 5-6 minutes, it should have some browning and come up off the pan easily. Don’t forget to flip it, and cook it for another 5 minutes.

Take the pan off the stove and put it in the oven. Now you have think about how you like your steak, that will determine how ,long it cooks in the oven for.
Medium Rare: 3-5 minutes in the oven

Medium: 8-10 minutes in the oven

Medium Well: 10-12 minutes in the oven

Once cooked to perfection remove it from the oven and let it sit for 5 minutes. This will ensure you have a ridiculously juicy steak… yum! Trust me, you’ll definitely love this recipe and not regret learning how to cook a steak sooner. 

Now let’s get back to talking about steaks and how to tell a good one. I highly recommend visiting a local butcher shop to ask them questions about meat cuts, and how to tell what a good piece of meet is.  Look into into butcher shop sarasota if you live in Florida, to learn about cuts and marbling. Butcher shops are able to physically show you the differences in meats, where I can really only do my best to explain them to you. In most cases you can get a reasonable piece of meat, and all the sides such as mashed potatoes (my favorite) for less then a meal at a restaurant. Tone It Up Galentine's Day

On Saturday morning I headed to Southfield to meet up with 60+ like-minded babes for the TIU Michigan 2nd Annual Galentine’s Day get-together. Being apart of the Tone It Up (TIU) community has been absolutely amazing. I have gone to barre, brunch, Chicago and even meetups in the woods - and all have been so much fun. The babes I have met and friendships that have been created will last a lifetime and Saturday was no exception. We started the morning with a little meet and greet, Kundalini Yoga, followed by healthy snacks and plenty of swag from all of our amazing sponsors. 

I’m sure most of you have not heard of Kundalini Yoga before, well it is a blend of Bhakti Yoga (the practice of devotion and chanting), Raja Yoga (the practice of meditation/ mental and physical control) and Shakti Yoga (the expression of power and energy). The goal of a well-taught class is to leave you feeling like you’ve gone to a therapy session, had a great workout, made it to your yoga mat and enjoyed a fun singing session with friends.

Last year at the first Tone It Up Galentine’s event I tried Kundalini Yoga for the first time and absolutely loved it. Therefore I was definitely excited to give it a try again this year. 

Kundalini Yoga incorporates movement, dynamic breathing techniques, meditation and the chanting of mantras, such as “Sat Nam” which means “truth is my identity.” The goal of the practice is to build physical vitality and increase consciousness. What I really loved about Kundalini Yoga is how it makes me feel about myself, it gives me so much body positivity and really makes me want to be better to my body and to myself. I truly feel like Kundalini helps get rid of negative energy and see things in a positive light which is 100 percent what I need in my life. I will do an entire post later on Kundalini Yoga so stay tuned! 

After yoga, we got our snack on. We each brought a snack to share, so after our little photo shoot and yoga we indulged in some goodies. From salads and fruit to dessert hummus, pigs in a blanket and protein muffins there were plenty of goodies to indulge in. I am already excited about our next meetup with these wonderful babes.

Chocolate Covered Strawberries

Chocolate covered strawberries are a Valentine’s Day staple. You’ll find them at nearly every bakery and grocery store in town, but sometimes they come with a hefty price tag. I actually was at a bakery recently that was selling these bad boys for $5 EACH. That’s absolutely insane and is the reason why this year I decided to make my own. I actually went to Aldi and bought strawberries, Aldi melting chocolate and a variety jar of sprinkles. All which cost under $6!

Chocolate covered strawberries are not only great for Valentine’s Day, but they’re the perfect dessert option for a romantic night in, girls night, a bridal shower and more. You may think that chocolate covered strawberries are too difficult to make, but the truth is they’re not. With my tips and tricks, you can easily impress anyone with your beautiful berries. 

Strawberries can be tricky to purchase depending on the time of year. My favorite berries are when I can pick them from a local Michigan farm in June, but it’s February and not June so I had to head to the grocery store. The tastiest strawberries are actually the small ones, the larger berries typically have little to no flavor at all. You’ll also want to find berries that have good stems that you can hold onto as you dip the berry into the chocolate.
 Your berries should be dry when you dip them. So make sure you wash them, and then place them on paper towel allowing plenty of time for them to dry. The chocolate cannot adhere to a wet berry, not to mention water and chocolate do not mix well together.

Picking your chocolate. I actually believe this is a personal preference. I don’t like using mini chips at all, but some people do. Sometimes I will go to a cake supply store and buy chocolate melts from them, and times like this I just buy my chocolate from Aldi. Whatever chocolate you prefer is the kind you should use for your berries. You can use a double boiler to melt the chocolate, or if you want an easy alternative, put it in a bowl in the microwave and melt it on defrost.

Peppermint Chocolate Swiss Roll

Impress your significant other this Valentine’s Day with this decadent, yet simple, Peppermint Chocolate Swiss Roll. Have you ever made a swiss roll cake? It looks pretty tricky to make, doesn’t it? Well, to be honest, it’s actually super simple. Instead of it being a regular cake recipe, you’ll want to make a sponge cake. What’s the difference between a regular cake and a sponge cake? Well, this one is made up of flour, sugar, and eggs, no butter and oil. Once you whip up the batter for this cake you’ll pour it into a large jelly roll pan that has been lined with parchment paper, and once it’s done you will immediately turn the cake out onto a flour sake towel that is heavily coated in powdered sugar - this is so it doesn’t stick. You’ll roll the cake up in the towel, starting at the short side. Then you’ll want to let it completely cool before you unroll it and spread the Hudsonville Peppermint Stick Ice Cream on it.

Peppermint Chocolate Swiss roll

For the batter: 

4 eggs, divided

1/2 cup + 1/3 cup sugar divided

1 teaspoon vanilla

1/2 cup flour

1/3 cup cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/8 teaspoon salt

1/3 cup water


1. Preheat oven to 350 degrees.

2. Line a 10x15 inch jelly roll pan with parchment paper.

3. Grease the parchment paper with cooking spray.

4. In a mixing bowl, use an electric hand mixer to beat the egg whites until soft peaks (peaks will fall when you lift the beaters).

5. While mixing, slowly add in the 1/2 cup of sugar and beat until stiff peaks form.

6. In a bowl of a stand mixer with a whisk attachment, beat egg yolks on medium speed for 3 minutes. 

7. Add 1/3 cup sugar and vanilla.

8. Beat for 2 more minutes.

9. In another bowl, mix flour, cocoa powder, baking powder, baking soda and salt together.

10. Alternate adding the flour mixture and the 1/3 cup water to the egg yolk mixture in the stand mixer.

11. When thoroughly combined, fold the chocolate batter into the egg whites a little at a time.

12. Stir until completely combined.

13. Spread the batter onto the prepared baking sheet.

14. Bake for 12-15 minutes or until toothpick comes out clean.

15. While the cake bakes coat your bowl with powdered sugar.

16. When the cake is complete, immediately turn it onto the towel.

17. Remove the parchment paper from the cake. 

18. Starting at the narrow end begin to roll the cake up in the towel. 

19. Let the cake completely cool.

20. Carefully unroll the cooled cake.

21. Spread the ice cream evenly over the entire surface.

22. Roll the cake back up in the same way you did before, but this time without the towel.

23. Cover the cake in plastic wrap.

24. Place it in the freezer for at least 3 hours. 

25. When ready to serve add a chocolate ganache. 

26. Enjoy!

Relationship Intentions

If you’ve been following along this year, you know that I recapped 2018 and set my intentions for 2019. The trend there is 2019 is all about being a goal-getter and going after what I want so I can live a more fulfilled life instead of being the girl that says “no” to a boat ride because I’m too insecure to wear a bathing suit.

I’ve set my intentions for work, wellness, finance…etc - and then some of you asked about my intentions for my love life…yikes! That was something that I didn’t really think about, but a lot of you wanted help with, and frankly I could use a little help as well. Plus it’s the first day of the month of love so why not talk about relationships. When I first started writing this I was going to tell you to write this list with your significant other, however I am going to retract that. I think it’s important to have your own intentions and be mindful of them - plus this might just lead you to being in the best relationship of your life by 2020. For those of you that are engaged, married and such this is for you too. These ideas are general ones that everyone could be implementing into their relationship.

1. Focus on finding the good. It’s no secret that optimism and gratitude make for a happy life, I even have this as one of my intentions for the year. Finding the good isn’t just an individual effort, it’s critical for a happy and healthy relationship too. It’s easy to notice and vocalize what your partner is doing wrong, which can lead to resentment on both side. We’ve all found ourselves thinking about our partner’s flaws, but try to reframe from these negative thoughts and think about what you like about them and what they do to make your life better. Start noticing more of the good, instead of the bad.

2. Plan more dates. With busy schedules sometimes the word “date” needs to be reevaluated. A date should be any time the two of you get quality alone time (dinner, a movie, grabbing coffee together, etc). If you have to schedule the date and say every Wednesday night we will do something just us, do that.

3. Learn your partner’s love language. I highly recommend picking up a copy of Dr. Gary Chapman’s #1 New York Times Bestseller, The Five Love Languages (there are various additions - I read the singles one). At the end of the book there is a quiz each you and your partner should take. This quiz will tell you what your love language is: Acts of Service, Words of Affirmation, Quality Time, Receiving Gifts and Physical Touch. Once you each know your love language, this will help you interact with your partner better, which will help make both parties feel more appreciated.

4. Tell him/her what you want. No one reads minds, I don’t know if you know that or not - but it’s true. You have to say what you want, and mean what you say. Working on communicating exactly what you want from your partner and listening when they communicate with you will be key to a success relationship.

5. Set career and life goals to achieve together. It’s that time of the year where we are all setting our own intentions for the new year, but did you ever think of including your partner in on them. Your partner is someone (well should be someone) who will help hold you accountable to reach the career goals they know you want to accomplish. When you share personal goals and make goals together it will help you feel like you’re on a team, which leads to a more confident relationship. 

6. Try something you both haven’t done before. It’s easy to get into the routine of I have done X before, but you haven’t so lets go try it. While that’s great for a few things get a little adventurous and make your relationship fresh and new. Try a new type of food together, go rock climbing, visit a city neither of you have been to…etc.

7. Plan a trip. Scheduling and going on a trip together could be a complete game changer for your relationship. Not only does it get you both out of your comfort zone, you’re forced to spend quality time together which leads to gaining a stronger connection. Even if you can’t afford a trip away, do something that gets you active in something besides a simple dinner out together.

8. Affection. You know the high of a new relationship, you have hand holding, kissing and intimacy whenever and whereever. If you don’t keep things new, fresh and spicy eventually this fades and you’re left wondering why he just won’t hold your hand anymore or kiss you on the forehead when you’re laying on the couch. Bring it all back, hold hands while you watch movies on the couch or get close and snuggle, random hugs and other things can score you points to bring back what you thought was lost.

9. Laugh more. Easier said then done sometimes if you’re not a comedian, however laughing doesn’t have to come from you - you can watch a comedy together and share laughs that way. One of my favorite memories is when A and I went bike riding and were coming up with “pet names” for each other as a joke - they were HILARIOUS and I don’t think I have ever laughed so much in my life, even now writing about it I have tears running down my face. Share and make those moments!

10. Say ‘I Love You’ more. Life is short, don’t miss your chance to tell someone who means everything to you that you love and appreciate them. This is something I struggle with, I’m afraid to say it because I am afraid of the pain and hurt that it can bring - however you never know when something can happen and you don’t want to live in the moment of regret because you didn’t say what you wanted to.

11. Forgive and forget. If you’re forgiving your partner that means you should forget it, because you’ve worked through it. You’ve seen their perspective and they have seen yours. Once you’ve forgiven that means it’s a past issue, you understand the miscommunication and you’ve worked through it. Enough said, period.

12. Change your argument language. The way you speak has a major impact on everything from your intimacy to the way you two communicate. I tend to get loud, obviously this solves nothing and makes the situation a million times worse. I’ve learned that I get loud because I am so little I feel like I am not being heard (girl EVERYONE hears you) - therefore that is something I am actively working on. I learned that I need to focus on why I felt hurt, instead of what they did that made me feel that way. Instead of saying “I understand” when the other person would make a point I would get defensive, which just made the whole situation worse. Acknowledging their defense makes a world of a difference, because now you’re both actively listening to each other. Fix the problem now so it’s not one in the future.
