Hudson’s department store made the Maurice Salad a hit
around the Metro Detroit area. Eventually Hudson’s changed to Marshall Fields
and then to Macy’s, however in some Macy’s department stores around the area
you can still find the café or the salad dressing. Meeme (my grandma that
passed away on Christmas last year) absolutely LOVED Maurice Salads. Ever since
I was little I would go to Oakland Mall or Somerset with her and we’d each get
a Maurice Salad. The last few years her and I have done Christmas shopping
together at the mall and have stopped to take a break to enjoy the salad
together. Last Friday my boyfriend and I decided to do dinner together, and he
had mentioned Maurice Salad. While I headed to his house, he headed to Kroger
to pickup everything we needed to make the salad and the signature Maurice
dressing. The result tasted just like the salad Meeme and I were never able to
get this past Christmas. All my Maurice salad memories are surrounded by
shopping and Meeme, while this one my boyfriend and I created when we worked
together in the kitchen. Have you ever had a Maurice Salad before?
Maurice Salad
Makes 6 – 8 Servings
Dressing
Ingredients:
2 teaspoons white vinegar
1.5 teaspoons lemon juice
1.5 teaspoons onion juice
1.5 teaspoons sugar
1.5 taspoons Dijon mustard
¼ teaspoon dry mustard
1 cup mayonnaise
2 tablespoons chopped fresh parsley
1 hard-cooked egg, diced
Salt to taste
Directions:
1. Combine all ingredients in a food processor, and blend well.
Salad
Ingredients:
14 ounces ham, cut into strips
14 ounces turkey breast meat, cut into strips
14 ounces swiss cheese, cut into strips
½ cup slivered sweet gherkin pickles
1 head iceberg lettuce, shredded
12-16 pimiento-stuffed green olives (we skipped this because we don’t do olives)
