This past weekend I spent time at my parent’s house and in
between barbeques and trips to get ice cream we found time to whip up a couple
holiday favorites. Chocolate chip bars for the boys and lemon batter bars for
us girls. You may know of my love for all things lemon (as you can see here,
here and here), but these bars hands down are my favorite. They’re so simple to
make and it’s hard to just have one!
Lemon Batter Bars
Ingredients
1 package lemon cake mix (I used Duncan Hines)
½ cup salted butter; melted
3 eggs
1 package cream cheese; softened
1 can lemon frosting (I used Duncan Hines)
Directions
1. Combine cake mix, butter and one egg until moist. Pat into a greased 9”x13” pan.
2. Blend lemon frosting into cream cheese until smooth.
3. Reserve a little over ½ cup for frosting baked bars.
4. Add remaining two eggs to the frosting mixture and beat on high for 5 minutes.
5. Spread frosting mixture (with the eggs) over the base.
6. Bake at 350 for 30-40 minutes.
7. Cool bars, frost, cut into bars and keep in the refrigerator.

ReplyDeleteI always believe that batter form of anything always tastes much better... so I must say these look that much yummier to me in the name alone! :) i tried to bake this weekend but never got around to it, which seems to be the norm! I need to be more proactive about it!
