Peanut Butter Cookies

Classic peanut butter cookies are my favorite. I have tried different recipes, but always go back to the one I found in my great grandma's recipe box. With temperatures dramatically dropping this week I knew these cookies would be ideal to counter the chilly weather.

Classic Peanut Butter Cookies
Ingredients
1 1/4 cups All-purpose flour
3/4 teaspoon Baking Soda
1/4 teaspoon Salt
1/4 cup Salted butter; softened
1/4 cup Shortening
1/2 cup + 2 Tablespoons Jif creamy peanut butter
1/2 cup Light brown sugar;packed
1/2 cup sugar + more for sprinkling on the cookies
1 egg
2 teaspoons vanilla

Directions
Mix all ingredients together. Form into 1" balls press with a fork to create a checkered pattern and sprinkle on sugar.  Bake at 325 degrees for 6-8 minutes, or until edges are golden.
