Skinny Brownies

My Skinny Funfetti Cupcakes were such a hit I just had to share with you my recipe for Skinny Brownies. The recipe is super simple - mix one can (12 ounces) of Diet Pepsi with one box of brownies and bake at 325 for 20-30 minutes or until a toothpick inserted in the middle comes out clean. *note: I do not drink pop - I only use it in recipes. Therefore instead of buying a case and having cans I just buy a 20 oz. bottle at the grocery store and measure out 12 ounces. *

{I used a 9x9 inch glass pan for thicker brownies, but a 13x9 would work too.}
The brownies turn out moist and delicious!

  1. Yum I never thought of doing that with brownies! I love making diet cupcakes, or as my Eagle Scout boyfriend likes to call it "dump cake". Apparently because when camping you just "dump" the cake mix and soda into a dutch oven and cook. Still sounds gross. Haha

  13. For someone who has been cooking for a long time (okay,so I thirty-five), I am always amazed that a bottle of Pepsi and cake mix can really work-makes me wonder if eggs and oil really do anything but "fluff" the cake and make my bootie larger :))

  17. I've done this before and loved it! You can also make cake mixes with 7 Up that turn out pretty good too.

  23. Add a teeny sploush of mint essence... delicious... pepsi + mint it's really great during summer-just have to do like you make a mojito, but don't put alcool use diet pepsi... mmm
