Ingredients
1 c. peanut butter
1 c. Splenda
1 egg
1 tsp. baking soda
1 tsp. vanilla
Directions
Combine (by hand NOT a mixer) the peanut butter and splenda together until completely combined. Add the egg and mix well. Finally add the baking soda and vanilla and mix. Drop onto a cookie sheet and bake at 325 degrees for 5-7 minutes.
Let cool and then store in the freezer for best taste and togetherness.
You know I have a weakness for peanut butter.... Now I'm going to have to make these!!
ReplyDeleteI tried baking with the splenda stuff but I always found it tasted a little funny. I bet the peanut butter would cover that up though... might have to give it another try!

OMG!!! You should have not shared the recipe. Peanut Butter Cookies are my favorite. Now I have a great reason to eat them right? Only 2 carbs... I think so!!!

I have tried to read through a lot of comments, and haven't found anyone mentioning flour. Doesn't this recipe need almond or coconut flour? I originally thought when I copied the recipe down, I had left the flour off, so looked at some other recipes for the amount they used, and added 1 cup almond flour. They were good
