Hey Erica! Thanks for checking out my blog! What good timing to stop by here! My favorite Valentine's dessert is the one my husband has made for me every year since we started dating over 6 years ago (we got married this past July): chocolate covered strawberries. I swear he makes the best ones, although I may be biased. :)
Adding you to my blog reader!
Umm anything chocolate! But I DO need to figure out what to make for dinner on V-Day!
here is my fav!
Chocolate Cherries
Ingredients
3 cups of sugar
1 cup plus 1 tbsp water
¼ cup corn syrup
60 marashino cherries
melting chocolate
butter or margarine for greasing
Butter a 9x13 pan and set aside
combine sugar, water and corn syrup in medium saucepan. Using a WOODEN spoon, stir gently over med. Heat until sugar dissolves completely and syrup comes to a boil.
Without stirring, cook until reaching 240 Degrees
Immediately pour the hot syrup into the prepared pan. Let the syrup cool undisturbed until the bottom of the pan is lukewarm
Using a wooden spoon, stir the mixture until it forms a ball. (Some of this may stick to the pan. It may also seize into a hard ball. In any case, seal ball in a ziplock bag, removing air.)
Let it rest for 1 minute before continuing.
With the candy sealed in the bag, roll with the heal of your hand, pressing down towards counter. Continue light kneading until it looks smooth and creamy, and feels like a firm cookie dough. (about 10 minutes)
Drain cherries, putting aside the liquid. Place on paper towels to absorb excess liquid.
Butter large cookie sheet and line with wax paper
Place candy in double broiler set over simmering water. Stir until candy melts. Continually stirring until reaching 150 degrees. TURN OFF HEAT
Stir in 2 or 3 Tbsp of cherry liquid. Should the candy fall below 150, turn on heat until it raises again.
Dip cherries into candy. If candy thickens while dipping add more cherry liquid.
Set them aside to dry
Dip into chocolate
Let sit for 2 hours. Place in the fridge overnight
Store in single layer in air tight container in fridge for up to 2 weeks
(and your already on my blogroll!

Great giveaway! :) I'd love to wear that apron as Im cooking up my meals! uumm well we go out for frozen yogurt for dessert usually! I love the sugar free fudgesicle! :) YUM!
I'd like to win this... Favorite desert? Hmm, probably a simple cheesecake. Not much of a chocolate fan. Even before the sweets though, I'd like breakfast in bed!
I always love chocolate cake... and the favourite around here is a chocolate cake with peanut butter cup/cream cheese icing:
Bake a regular devil's food cake mix. To make it extra soft, add a package of instant vanilla pudding mix.
For the frosting:
Beat together the 1 8 oz. package of cream cheese with 1/2 cup white sugar and 1 cup icing sugar until smooth.
Fold in 1 12 oz. container of frozen whipped topping (thawed), and about 12 coarsely chopped peanut butter cups (4 packs). Ice cake and enjoy!
